It's Been A While

So if anyone is out there and actually reading this, HELLO. What a busy year it has been so far. I haven't blogged since before Christmas, mostly because I was busy with a newborn! We welcomed a second daughter into our family on December 19, 2010- Sara Marleen, weighing in at 6 lb 15 oz and 20.5 inches long. She is absolutely perfect. She is now 6.5 months and although she's a great baby, having two kids hasn't made for much blogging time!
I recently got a new sewing machine, which means that I don't have to steal my mom's anymore when I want to do a project! This has meant that most of my free time has been spent making new things for my girls. One thing I have been making a ton of is soft soled, Mary-Jane style baby shoes. Pumpkin Scone Recipe

Up until a few weeks ago, I had never eaten a scone. I was at a ladies group at my Church, and somebody had brought pumpkin scones to munch on. I couldn't get enough! The lady who made them was kind enough to give out a copy of the recipe to everybody, so I decided that today was the day I would give it a try. I was a little intimidated because I had never made them before and I tend to dislike working with dough, but I think they turned out great!

Pumpkin Scones
Ingredients
  • 1 cup whole wheat flour
  • 1 cup all purpose flour 
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 6 tablespoons cold butter
  • 1/2 cup canned pumpkin
  • 3 tablespoons half-and-half
  • 1 large egg

 Directions
  • Preheat oven to 425 degrees F. Lightly oil a baking sheet or line with parchment paper.
  • Combine flour, sugar, baking powder, salt, and spices in a large bowl. Using a pastry knife, fork, or food processor, cut butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious. Set aside.
  • In a separate bowl, whisk together pumpkin, half and half, and egg. Fold wet ingredients into dry ingredients. Form the dough into a ball.
  • Pat out dough onto a lightly floured surface and form it into a 1-inch thick rectangle (about 9 inches long and 3 inches wide). Use a large knife or a pizza cutter to slice the dough twice through the width, making three equal portions. Cut those three slices diagonally so that you have 6 triangular slices of dough. Place on prepared baking sheet.
  • Bake for 14-16 minutes. Scones should begin to turn light brown. Place on wire rack to cool.

 There are also two glazes to go on top of the scones. I found that the scones weren't all that sweet, so the glaze really captured my sweet tooth. Plus the glaze and drizzle make the scones look pretty!
 
Plain Glaze
Ingredients
  • 1/2 cup powdered sugar
  • 1 tablespoon half-and-half
Directions
  • Whisk together until smooth.
  • Using a pastry brush, brush cooled scones with glaze and let dry.
Spiced Glaze
Ingredients
  • Remainder of plain glaze
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • pinch of cloves
  • pinch of ginger
Directions
  • Add spices to the remainder of the plain glaze and stir until smooth.
  • Drizzle the spiced glaze over top of each scone.
 Notes:
-I decided to use my blender to mix all the dry ingredients and cut through the butter. From there, I poured the dry ingredients into my stand mixer and let it do the work! I also used heart shaped cookie cutters instead of cutting the dough into triangles.
-I didn't have any half-and-half, so I used International Delights French Vanilla creamer in place.

These scones are delicious with a nice Pumpkin Spice Latte!

Pumpkin Spice Syrup

It might just be due to being pregnant, but for some reason, I can't get enough PUMPKIN this year. I've also been really into warm drinks, such as lattes and steamed milk. I'm really loving the Pumpkin Spice Latte from Starbucks, but I can't justify spending that amount of money each time the craving strikes- which is often. I did some searching online and I've found a recipe for Pumpkin Spice syrup. I can't get enough of it and it is too yummy not to share.

Pumpkin Spice Syrup
Ingredients:
  • 1 1/2 cups water
  • 1 1/2 cups sugar
  • 2 Tbsp pumpkin puree
  • 2 Tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp grated ginger
Directions:
  • Combine water and sugar in saucepan. Bring to a gentle boil.
  • Add remaining ingredients and let simmer 10 minutes, stirring often.
  • Strain through a towel or cloth into a jar or container.
That's it. Seriously. Store in the fridge and add 2-3 Tbsp (more or less, depending on your preferance) to steamed milk or make into a latte by adding a shot of espresso to 2 cups of steamed milk.

Cake!

In my last post, I had asked for ideas for freezer meals because I want to do a big cooking day for the freezer. I have gotten quite a few ideas, however, I haven't had the chance to go ahead with the cooking. There just aren't enough hours in the day. Though the opportunity to cook to freeze hasn't been there, that doesn't mean I haven't been spending time in the kitchen, because I definitely have. What have I been doing? More cake decorating.



I made use of my fabulous new Cricut Cake machine with all of these cakes! I have been having a blast with decorating and have a few cake orders coming up within the next couple of weeks. Freezer Meals

I was hoping to get some reader feedback and inspiration with this post. I suddenly have the urge to fill my freezer with prepared meals and am planning a cooking for the freezer day this weekend. I do have a few recipes in mind already (which I will share with you after my cooking day is complete), but I would love to know, what are your favourite meals for the freezer? Life Will Be Twice As Much Fun

My last excuse for not blogging more regularly was because I was busy having fun and baking cakes. My latest excuse?

Being pregnant is just making me too darn tired to want to go on the computer! Baby number 2 is due December 26th, which makes me 15 weeks. Well, now you know my little secret! I have plenty of crafts planned in preparation for the new baby that I will certainly be sharing with all of you! Thanks for reading- see you around.
